These waffles are crisp on the outside and moist on the inside. They are the best gluten-free waffles I've come up with to date. In fact, my kids have already asked me to make them again!
Ingredients
1 cup brown rice flour
7/8 cup milled flaxseed
1/2 t cream of tartar
1/4 t baking soda
2 T grapeseed oil
4 oz. unsweetened applesauce
1 1/3 cups unsweetened coconut milk
Directions
Preheat Belgian waffle iron.
Mix all ingredients in medium mixing bowl.
Spray waffle iron with cooking spray.
Spoon 3/4 cup batter into waffle iron and close lid.
Cook until indicator light goes off or waffle iron stops steaming.
Makes about 3 waffles. Serve with pure maple syrup.
